Peanut Butter Pretzels

Crunchy pretzels filled with creamy peanut butter, then dipped in chocolate for a sweet and salty treat that's perfect for snacking.

Ingredients
  

  • 1 cup peanut butter creamy or chunky
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 48 mini pretzels
  • 1 cup semi-sweet chocolate chips optional: for dipping
  • 1 teaspoon coconut oil optional: for chocolate dip

Instructions
 

Prepare Peanut Butter Filling:

  • In a mixing bowl, combine peanut butter, powdered sugar, and vanilla extract. Mix until smooth and creamy.

Assemble Pretzels:

  • Spread about 1 teaspoon of the peanut butter mixture onto one pretzel. Top with another pretzel to create a sandwich. Repeat with the remaining pretzels.

Chill the Pretzels:

  • Place the pretzel sandwiches on a baking sheet lined with parchment paper. Freeze them for about 30 minutes to firm up.

Optional: Chocolate Dip

  • Melt the chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Dip half or all of each pretzel sandwich into the melted chocolate, then place back on the parchment paper.

Let Set:

  • Allow the chocolate-covered pretzels to set at room temperature or chill in the fridge for faster setting.

Serve and Enjoy:

  • Once set, enjoy the peanut butter pretzels or store them in an airtight container for up to 1 week.
