- 1 tablespoon Chinese green tea Gunpowder tea
- 1 handful fresh mint leaves around 10-15 leaves, plus extra for garnish
- 4 cups water
- 3-4 tablespoons sugar adjust to taste
Rinse the Tea:
Place the green tea (Gunpowder tea) in a teapot. Pour a small amount of boiling water (about 1/4 cup) over the tea leaves, swirl for a few seconds, and discard this first rinse. This removes impurities and bitterness from the tea.
Mix and Aerate:
Traditionally, Moroccan mint tea is aerated by pouring the tea from a height into glasses. Carefully pour the tea from the teapot into a glass, then pour it back into the pot. Repeat this process 2-3 times to mix the tea, dissolve the sugar, and create a frothy top layer.
