Ingredients
  

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream or plain Greek yogurt
  • 2 large apples peeled, cored, and diced

Instructions
 

Preheat the oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.

Mix dry ingredients:

  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

Cream the butter and sugar:

  • In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Combine wet and dry ingredients:

  • Gradually add the dry ingredients to the wet ingredients in 3 parts, alternating with the sour cream or yogurt. Start and end with the dry ingredients, mixing just until combined. Be careful not to overmix.

Add the apples:

  • Fold the diced apples gently into the batter.

Pour into the pan:

  • Spread the batter evenly into the prepared baking dish.

Prepare the topping:

  • In a small bowl, mix together the sugar and cinnamon for the topping. Sprinkle it evenly over the cake batter.

Bake:

  • Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Cool and serve:

  • Let the cake cool for about 15 minutes before slicing. Serve warm or at room temperature.
